Roasted Garlic Dill Hummus

My favorite recipes are the simple but delicious kind. This hummus checks all of those categories. The roasted garlic offers a sweetness while the olive oil and fresh dill add a Mediterranean twist to this classic appetizer. Pairs great with raw carrots, cucumbers or crackers and tastes even better on sandwiches, wraps or pizza!

Roasted Garlic Hummus

  • 1 can (15 oz.) chickpeas, rinsed and drained
  • 4 cloves roasted garlic*
  • 1/2 Tbsp. red wine vinegar OR juice of 1 lemon
  • 1 Tbsp. tahini
  • 2 Tbsp. olive oil
  • 1/4 cup chopped dill (reserve some for sprinkling on top)
  • 1 tsp. salt
  • 1/2 tsp. pepper


  1. Combine all ingredients in a food processor and blend until smooth (~2 minutes), scraping down the sides as needed
  2. Add a little water to help the hummus thin out (start with ~1-2 Tbsp.)
  3. Sprinkle with extra chopped dill and a drizzle of olive oil
  4. Serve with vegetables, crackers, pita bread, or whatever your heart desires

*To make roasted garlic preheat oven to 375 degrees, take a whole head of garlic, cut off the top of to expose the cloves. Place this head of garlic in aluminum foil and drizzle with olive oil and bake for ~30 minutes
